How to Make Chocolate Zucchini Cake and Zucchini Bread with Cake Mixes

We’re giving away free cake mixes this week, chocolate and vanilla.  And you’re probably awash with zucchini.  So we put the two together and started adding zucchini to cake mixes.  The results were scrumptious.

You can add zucchini to many cake and bread mixes.  Zucchini is mostly water so it’s a substitute for the some of the moisture in your recipes.  So it’s an educated guess and trial and error.

Here’s how we did it.

Cinnamon Chip Zucchini Bread

We used our Vanilla Bean Baby Cake Mix.  It took a couple tries but in the end, we eliminated the water and reduced the oil to 1/2 cup and then added two cups grated zucchini.  We added 3/4 cup cinnamon chips.  We baked it in a bread loaf pan.  It made great zucchini bread.  We didn’t like it as well as our favorite scratch recipe, Sour Cream Zucchini Bread, but that’s a high bar to cross.

1 Vanilla Bean Baby Cakes Mix
1/2 cup vegetable oil
3 eggs
2 cups fresh grated zucchini
3/4 cup cinnamon chips

 

Preheat the oven to 325 degrees.

  1. Prepare a 9 x 5 inch bread pan by greasing and flouring or lining with parchment paper.
  2. In your stand-type mixer, beat the cake mix, oil, eggs, and zucchini for about three minutes.  Fold in the cinnamon chips.  Scrape the batter into the prepared pan.
  3. Bake for 65 minutes or until done.  Let the loaf cool for 20 minutes in the pan and then remove it to a wire rack.  Refrigerate overnight before serving.

Chocolate Zucchini Cake

We used our Fudgy Baby Cake Mix and walnut pieces.  There are chocolate pieces and pudding in the mix and with the zucchini, we had a super moist, very scrumptious cake.  It was moist and sweet enough to eat without frosting but we loaded with our premade fudge frosting to make it even better.

Your family won’t know that there is zucchini in the cake.

1 Fudgy Baby Cakes Mix
1/3 cup vegetable oil
2 cups fresh grated zucchini
3/4 cup chopped walnuts
3 eggs

Preheat the oven to 325 degrees.

  1. Prepare a 9 x 13 inch pan by greasing or lining with parchment paper.
  2. In your stand-type mixer, beat the cake mix, oil, eggs, and zucchini for about three minutes.  Fold in the walnuts.  Scrape the batter into the prepared pan.
  3. Bake for 24 minutes or until done.  Let the cake cool in the pan on a wire rack.  If you use parchment paper, lift the cake out of the pan and onto the wire rack.

Chocolate Zucchini Layer Cake

We assumed that this recipe would work just fine as a layer cake but we tried it to make sure.  It did.

1 Fudgy Baby Cakes Mix
1/3 cup vegetable oil
2 cups fresh grated zucchini
3/4 cup chopped walnuts
3 eggs

Preheat the oven to 325 degrees.

  1. Prepare two eight-inch pans by greasing or lining with parchment paper.
  2. In your stand-type mixer, beat the cake mix, oil, eggs, and zucchini for about three minutes.  Fold in the walnuts.  Scrape the batter into the prepared pans.
  3. Bake for 23 minutes or until done.  Let the cake cool in the pans on a wire rack.  Frost after the cake has cooled.
