These are a takeoff of our Grumpy Cupcakes that were such a hit in the store. These are chocolate cupcakes with a cream cheese filling, a puddle of cherry filling on top, and a splash of chocolate ganache over the cherry.
There is a variation at the end that calls for cherry cordial ice cream in the center. With either a cream cheese filling or ice cream, these are delightful cupcakes.

Use our Baby Cakes cake mix. Mix and bake according to package directions.
Use our cream cheese pastry filling. Clip a corner on the two-pound pack and squeeze about 1/3 ounce through the top of each baked cupcake.
The cherry topping:
Use our cherry pastry filling for the puddle on top. You may be able to use a cherry pie filling. We haven’t tried it and may be very good but a little messy.
The following recipe will yield a thick, paste like ganache. You need a thick ganache for this recipe. If it needs to be thinner, heat it a bit; do not add more cream.
Bring the cream to a boil. Remove from the heat and add the vanilla. In a medium bowl, pour the hot cream over the chocolate. Stir until the chocolate is melted. Stir in the butter. Let the ganache cool until it reaches a desired thick consistency.
You can heat it or cool it as needed to get a thick coating.
How to Assemble Your Puddles Cupcakes
After filling the cupcakes with cream cheese pastry filling, place a scoop of cherry pastry filling on top and spread it to within a half inch of the edges of the cupcake.
Place another scoop of chocolate ganache over the cherry filling. The ganache should be viscous enough that it runs to edges with little dripping off the cupcakes. You may need to cool or warm the ganache to get the desired consistency.
Variation: Ice Cream Filled Grandpa Grumpy Cupcakes
Instead of filling the cupcakes with cream cheese filling, these are excellent filled with ice cream. Cherry cordial flavored ice cream is perfect.
To do so, you will need an ice cream cupcake tool. The tool cuts a core from your cupcake with a simple twist. You then use the tool to cut a core from a plug of hard frozen ice cream. Use the tool to inject the plug of ice cream into the center of the cupcake.
Cover the top, and hole, with the cherry filling.
You will need to keep these cupcakes frozen until you are ready to serve.
