A crisp is quick.  And very good.  We love them with panko toppings but I had a crisp in a restaurant recently, a raspberry rhubarb crisp with an oat streusel topping, and it was very good.  Which is better?  We set out to make them side-by-side and compare.

Crisps are very forgiving. They’re perfect fodder for freelancing. You can mix and match fruits for the filling.  I love rhubarb crisps.  You can add the topping of your choice. You can make them as sweet as you like.

The filling can be made with most fruits or a combination of fruits. Take apples and accent them with cranberries or raspberries. Take peaches and spike them with blueberries and slivered almonds. You can even take strawberries or strawberries and rhubarb and top them with a shortbread-like topping.

For crisps, use any streusel topping recipe intended for a pie. In the recipes that follow, you’ll find a panko topping and a streusel topping.  You can use other topping recipes.

If you make apple pies, apple crisps, or other apple desserts, you need an Apple Master.  An Apple Master will core, peel, and slice your apples in two minutes.

I’m partial to panko topping but that’s just my preference.  I still like an oat streusel; it’s just that I like a panko topping better.

We have a premade streusel that we sell in our store.   As an afterthought, we made a crisp with this streusel.  That makes it very easy: just prepare the filling and load it with premade streusel topping.  This topping does not have the coarseness of oats.  It’s more like a panko topping without building it from scratch.

A warm, streusel topped crisp with a scoop of vanilla ice cream is delicious.  The melting ice cream softens the oats a bit.
