How to Make a Strawberry Pie in as
Little as 15 Minutes

Strawberry Pies in Three Parts


Strawberry pies are made with three components
plus optional whipped cream: The strawberries, the crust, and the glace.  Choose what you want for each, assemble, and you have a pie—in as little as 15 minutes.

The strawberries. 

Use the best strawberries you can find.  Second rate strawberries will never make a first rate pie.  Strawberries will only stay at their prime for a few days.

Use a strawberry slicer.  It will cut your strawberry prep time by 2/3’s.  And with neat, uniform slices, your pie will be prettier.

The crust. 

You can make the crust from scratch, from a just-add-water mix, or premade.

I’m not a fan of premade crusts.  I used to make all my crusts from scratch.  Now I use a just-add-water mix.  It makes a crust as good as the best bake shop in town and it’s quick—just add water and beat for less than one minute.

Bake the crust for ten to twelve minutes at 375.  A pie crust chain weight or pie crust beads will help keep the crust from bubbling.


The glace.

You can buy the glace from the store or make your own.  Glace from the store is okay and super quick.  But here are the recipes.

Glace Recipe #1

1 cup granulated sugar
3 tablespoons cornstarch
1/2 cup water
1 tablespoon butter
1 cup crushed strawberries
a few drops of red food coloring (optional)

Combine the sugar, cornstarch, crushed strawberries, and water in a saucepan. Cook over medium heat until the mixture begins to boil, stirring often. Cook for two more minutes until the sauce becomes thick and translucent. Stir in the butter. Add the red food coloring if desired. Set it aside to cool.

Glace Recipe #2

3/4 cup granulated sugar
2 tablespoon Instant Clear Gel
3/4 cup water

red food color (optional)

Combine the sugar and Instant Clear Gel.  Add the water.  Whisk until the crystals are dissolved.   Add the red food coloring if desired.

Glace Recipe #3

1 1/2 cups of sugar
1/4 cup cornstarch
1 1/2 cups water
1 3 oz. box of strawberry Jell-O®

  1. In a sauce pan, combine the sugar and cornstarch. Add the water, stirring until the mixture is lump-free.
  2. Cook on medium heat until thick and clear. Immediately add the strawberry Jell-O. Let the glace cool and pour it over the berries in the shell.

To Assemble Your Pie

Spread the strawberry slices in the baked pie shell. Pour the cooled glaze over the berries. Refrigerate the pie until it is well-chilled.  Garnish with whipped cream and serve.

Optional Whipped Cream

We always add fancy whipped cream to our strawberry pies.  Sometimes we smother the pie.  Sometimes we just garnish the pie.  Lemon Cloud and Orange Cloud Whipped Cream are our favorites with strawberries.

Lemon Cloud Whipped Cream

2 cups whipping cream
1/2 cup granulated sugar
2 teaspoons lemon flavor
1 teaspoon lemon zest

Whip the cream to soft peaks.  Add the sugar, flavor, and zest and continue whipping.

Orange Cloud Whipped Cream

2 cups whipping cream
1/2 cup granulated sugar
2 teaspoons orange flavor
1 teaspoon orange zest

Whip the cream to soft peaks.  Add the sugar, flavor, and zest and continue whipping.
