One Vanilla Bean Baby Cakes Mix (reduce oil to 1/3 cup)

1 teaspoon raspberry flavor

1/3 cup sour cream

3/4 cup raspberry tidbits

 

  1. Mix according to package instructions adding the sour cream and flavor.
  2. Add the raspberry tidbits and mix until combined.  Do not over-mix.
  3. Bake according to package directions.

 

After the cupcakes are baked, fill them with either Bavarian cream pastry filling or a combination of Bavarian and raspberry pastry fillings.

Cut a quarter inch off the corner of the pastry filling package, stick the open corner  1/2 inch deep into the top of the cupcakes, and squeeze.  You will feel the cupcakes expand and get heavier as the filling is injected into the cupcakes.  To fill with a combination, fill first with Bavarian cream and then go right back through the same holes with squirts of raspberry filling.

To frost, use our buttercream frosting mix and add 1 1/2 teaspoons raspberry flavor and a couple drops of Americolor Tulip Red or Xmas Red food coloring gel or equal.
